Local Apple & Blackberry Muffins

Apple Blackberry Muffins

(Makes approx. 12)

1 egg

1/2 c. milk (120ml)

1/4c. vegetable oil (60ml)

1 1/2 c. flour (165g)

1/2c. sugar (100g)

2 tsp. baking powder

1/2 tsp salt

1/2 tsp cinnamon

1 cup blackberries (fresh or frozen) (100g) – I added a few more because they are simply delicious!

1 grated apple


Pre-heat oven to 400 F (200 c)

Beat egg, stir in oil and milk

Stir in grated apple.

Add flour, sugar, baking powder, salt and cinnamon – stir very gently until just incorporated (don’t overmix muffins or they’ll be tough)

Fold in Blackberries, then spoon into greased or papered muffin cups

Bake for 20 minutes, or until a toothpick inserted comes out clean

Enjoy, these are now one of my favorites!
